Stout Peanut Butter Brownies

Hubbie’s birthday was this past weekend so I wanted to make something special for him. Even though I’ve craved beautiful fluffy frosting, he is not a huge dessert guy and he likes to keep his desert simple; chocolate chip cookies, brownies, that’s pretty much it.
But, he is a craft beer guy and he loves peanut butter so I decided to make something a little special:  dark chocolate stout brownies with stout peanut butter frosting drizzled with peanut butter, stout, dark chocolate syrup. See, I love him so much (and I’m so completely selfless) I completely ignore my craving for frosting and make him a simple birthday day dessert.
But seriously, this recipe turned out great. All parts compliment each other really nicely. Try them alone, make a brownie sundae, OR if you’re feeling crazy, make an affogado sunday.

You can use any stout you’d like, such as Murphy’s or Guinness or you can get a fancy craft beer stout. I used Rouge’s Chocolate Stout to up the chocolate ante.

Since there are three parts to this recipe, I made it easy by going semi-homemade on the brownies.  Grab a box of your favorite brownie mix – I like dark chocolate for this – and use the dry mix  only.  Do not follow the directions on the box, do not use those ingredients.  But if you want to check the boxes suggested baking time/temperature that’s ok.

Stout Peanut Butter Brownies
Ingredients:

Dark Chocolate Stout Brownie:
1 – 18-ounce box dry dark brownie mix
¼ cup stout beer
½ cup unsalted butter
4 ounces dark chocolate, finely chopped
1 egg

Stout Peanut Butter Frosting:
2 tablespoons stout beer
4 tablespoons creamy peanut butter
1/2 cup powdered sugar

Peanut Butter, Stout, Dark Chocolate Syrup:
2 tabplespoons creamy peanut butter
6 ounces dark chocolate
2 tablespoons unsalted butter
½ cup dark stout

Directions:

  1. Preheat the oven to 350 degrees F.
  2. In a small sauce pot over medium heat, melt the ½ cup butter with the ¼ cup dark stout.
  3. In a large mixing bowl, pour the butter-stout over the 4 ounces of dark chocolate. Stir until the chocolate has all melted.
  4. Pour the dry brownie mix on top of the butter-beer-chocolate mixture. Stir until just combined.
  5. Add the egg and stir until just combined.
  6. Scoop the batter into an individual brownie pan. OR Pour into a regular 9-inch-by-13-inch baking pan.
  7. Bake for 15 to 20 minutes, if using the individual brownie pan. Bake for 25 to 30 minutes f using the regular baking pan.
  8. Let the brownies cool to room temperature before frosting.
  9. To make the frosting, stir together peanut butter and beer in a small bowl until combined. Add in the powdered sugar and stir until smooth.  It will be very thick.  Spoon onto cooled brownies.
  10. To make the sauce, place 2 tablespoons of peanut butter and 6 ounces of dark chocolate in a medium bowl. Melt 2 tablespoons butter and ½ cup dark stout in a small saucepan over medium heat. Pour over the peanut butter and dark chocolate. Stir until the all peanut butter and chocolate has melted and the sauce is shiny.
  11. Drizzle the chocolate, peanut butter, stout sauce over each individual brownie. Let set for an hour before serving so the drizzled sauce can dry.

Notes

Be sure to use dry brownie mix ONLY. Do not add any of the other ingredients listed on the box; use the ones listed here instead! You are using the stout instead of water and unsalted butter instead of oil.
