So it’s become a tradition for me to make my birthday cake. It’s something I look forward to every year and usually spend a lot of time deciding which cake I make.  This year I really wanted a fairly simple white cake with buttercream frosting but I wanted 3 layers.  Since I love buttercream I assumed I would just use the same frosting to cover the cake and in between the layers.  Then I had a genius idea – vanilla pudding filling!  It’s not as sweet as the standard buttercream and would help to break up the 3 layers a little.  Since I wanted the cake to stay as stable as possible, I figured that I should stabilize the pudding a little. Since I had a package of Jello Instant pudding in my cabinet, I knew I could use that easily and decided that using heavy whipping cream instead of milk should get me the results I needed — and it worked!  This was super simple and exactly what I needed for classic {30th} birthday cake.

Pudding Filling for Layer Cake

Ingredients:

  • 1 package Jello Instant Pudding – I used Vanilla
  • 1-3/4 Cups Heavy Whipping Cream
  • 1 tsp Vanilla Extract

Instructions:

  • Mix all ingredients until smooth and thick.  Cover with plastic wrap and place in fridge until it is set.
  • Spread filling on your cake and in between your layers.
  • NOTE: Cake must be completely cooled.  I refrigerated mine overnight before assembling, but a few hours will work as well.
  • Also, remember that the filling is milk based so you have to keep it cool/refrigerated.

To Assemble:

  • Place parchment paper around the edges of your cake stand or plate.
  • The cake must be completely cool so the pudding doesn’t become runny.
  • Pipe the frosting around the edge of the cake so that the filling doesn’t spill out the side.
  • Plop the filling in the center and smooth out to one even layer.
  • Add your next layer (repeat if you have more than 2 layers) or frost your cake.
  • Refrigerate until 1/2 hr to 1 hour before cake is served.
