I love banana bread, I mean seriouslu, who doesn’t?  It’s one of those perfect treats – a little sweet, slightly gooey, and health-ish.  But this banana bread cake takes banana bread to a new level of dessert.  It’s great after a meal with a scoop of vanilla ice cream or a dollop of fresh whipped cream – or just on its own.  So if you’ve got a few bananas that are passed their prime – please make this cake!

I made this in 2 containers – the first had just chopped walnuts to bring to my mom’s for dinner and the second (which I kept just for me) had both walnuts and mini chocolate chips.  I had a rough work week coming up and wanted to know I had a delicious dessert in the fridge waiting for me when I needed it 🙂

Banana Bread Cake


1-1/2 Cup Sugar

1 Cup Sour Cream

1/2 Cup (1 stick) butter {very soft}

2 Eggs

3 Ripe Bananas, Mashed

1/2 Cup Applesauce

1 Tablespoon Vanilla Extract

2 Cups Flour

1 tsp Baking Soda

3/4 teaspoon Salt


1/2 Cup Chopped Walnuts

1/2 Cup Chocolate Chips

Brown Butter Icing:

1/2 Cup Butter

3 Cups Powdered Sugar
1 1/2 Teaspoon Vanilla Extract
3 Tablespoon Milk



Preheat oven to 375F. Spray cake pan (8×10-in minimum) with non-stick spray.  In a large bowl, beat together the sugar, sour cream, softened butter, and eggs until nice and creamy.  Then stir in the mashed bananas, applesauce, and vanilla extract.  Then add your dry ingredients and blend for at least a minute (flour, baking soda, and salt).  Mix in the chopped walnuts and/or chocolate chips. The mixture will be clumpy with the mashed bananas and nuts/chocolate.

Spread batter into your pan.  Bake for 35-45 minutes.  The edges and corners should be golden brown and they center is no longer gooey.

Once the cake is out of the oven, it’s time to make the icing. In a large saucepan over medium heat, melt butter until just boiling. Let the butter turn a light brown and then remove from heat immediately.  Pour into a large mixing bowl and add the rest of the ingredients {powdered sugar, vanilla extract, and milk}. Whisk together until smooth (it should be thicker than a glaze but thinner than frosting). Using an offset spatula, spread the brown butter icing over the warm bars (the frosting will be easier to spread while the bars are still warm).
